MAKES 1 DRINK

3 sprigs of cilantro, plus extra for garnish

3 black peppercorns

2 Szechwan peppercorns

3/4 ounce lime juice

3/4 ounce simple syrup*

Splash of soda water or 7-UP

Muddle together peppercorns and cilantro. Allow to rest for a minute or two. Add lime juice and simple syrup and shake in a cocktail shaker. Strain into a highball glass filled with ice. Top with soda water or 7-UP and garnish with cilantro.

*Simple syrup can be purchased in well-stocked liquor stores or made at home by combining ½ cup of water and ½ cup of sugar in a pan. Heat until sugar dissolves. Allow to cool completely before using.

Note: This drink can also be made with the addition of 2 ounces of any white spirit, such as tequila.
