Blue cheese quiche

1 pie crust
6 egg yolks
1 cup whipping cream
1 cup milk
Salt,pepper and nutmeg to taste
6 ounces blue cheese
Select a pie crust recipe that uses butter. Prepare, ease into 9-inch pie pan and bake in pre-heated, 400-degree oven about 5 minutes or until crust is almost done.
Meanwhile whisk together egg yolks, cream, milk and seasonings. Crumble blue cheese into partially baked pie crust. Pour milk miture over. Reduce heat to 350 degrees and continue baking until quiche is browned and set, about 45 minutes.
Allow to set at room temperature for 10 minutes before serving.
Makes 4 generous servings
Time: about 1 hour (plus time for making crust)
