MAKES 6 SERVINGS
1 (12-inch) frozen cheese pizza 1 cup fresh spinach leaves 1 cup cooked chicken, shredded Salt and pepper 1 lemon, for drizzling 1 garlic clove, minced ¼ teaspoon fresh oregano ½ cup chopped green pepper ¼ cup chopped red onion ¼ cup pitted kalamata olives (drained) ½ cup fresh plum tomatoes, seeded and chopped 1 tablespoon olive oil 1 teaspoon fresh lemon juice ½ teaspoon fresh oregano ½ medium cucumber, seeded and sliced ¼ teaspoon salt Dash pepper T
Bake, following directions on box and adding 5 to 7 minutes. Check for doneness.
For sauce: Before or while pizza is baking, combine yogurt, lemon juice, oregano, cucumber slices, salt and pepper in food processor. Puree until cucumber is blended into sauce. Serve with pizza.
