MAKES 6 SERVINGS

1 (12-inch) frozen cheese pizza

1 cup fresh spinach leaves

1 cup cooked chicken, shredded

Salt and pepper

1 lemon, for drizzling

1 garlic clove, minced

¼ teaspoon fresh oregano

½ cup chopped green pepper

¼ cup chopped red onion

¼ cup pitted kalamata olives (drained)

½ cup fresh plum tomatoes, seeded and chopped

1 tablespoon olive oil

¼ cup chopped fresh parsley

SAUCE

6 ounces plain yogurt (preferably Greek)

1 teaspoon fresh lemon juice

½ teaspoon fresh oregano

½ medium cucumber, seeded and sliced

¼ teaspoon salt

Dash pepper

Preheat oven according to package directions.

op pizza with spinach leaves. Add chicken, salt and pepper, lemon juice, garlic, oregano, green pepper, red onion, olives and tomatoes; drizzle olive oil atop. Add parsley.

Bake, following directions on box and adding 5 to 7 minutes. Check for doneness.

For sauce: Before or while pizza is baking, combine yogurt, lemon juice, oregano, cucumber slices, salt and pepper in food processor. Puree until cucumber is blended into sauce. Serve with pizza.
