MAKES 6 (2-MUFFIN) SERVINGS
6 eggs ½ cup milk ¼ teaspoon salt 1 cup (4 ounces) shredded Cheddar cheese ¾ cup finely chopped zucchini (see note) ¼ cup finely chopped red bell pepper 2 tablespoons finely chopped red onion
Bake until just set (20 to 22 minutes). Cool on rack 5 minutes. Remove from cups and serve warm or bake ahead, cover and refrigerate, and quickly reheat in microwave in morning.
Note: Finely chopped broccoli or asparagus could be substituted for zucchini. For fewer calories, use reduced-fat cheese.
