MAPLE-GLAZED BAKED APPLES

MAKES 4 SERVINGS
4 large Rome Beauty ½ cup raisins ½ cup packed light brown sugar 1 teaspoon cinnamon ½ cup apple juice ¼ cup pure maple syrup 2 tablespoons melted butter or margarine

Core apples, leaving bottoms intact. Peel top half of apples. Place apples in 8-inch square pan.
In bowl, combine raisins, brown sugar, walnuts and cinnamon. Spoon mixture into apples, mounding over top of apples and letting excess fall into pan. Pour apple juice into bottom of pan.
In small bowl or cup, combine maple syrup and melted butter; spoon over top of apples. Cover pan with foil. Bake for 45 to 55 minutes or until apples are tender. Serve warm or room temperature. If desired, serve with vanilla ice cream.
