CAESAR SALAD DRESSING

MAKES 8 Generous SERVINGS

1 coddled egg (see Note)

1 cup oil (olive oil preferred)

½ cup fresh lemon juice

1 cup grated Parmesan cheese (less if you prefer thinner dressing)

2 small cans anchovies, drained

1 teaspoon freshly ground black pepper

1 tablespoon wine vinegar

2 cloves garlic

Place coddled egg and all other ingredients in a blender; blend until sufficiently combined. Serve immediately over a salad of Romaine lettuce, thinly sliced onions, croutons, and, if desired, slices of grilled or roasted chicken; or cover and refrigerate dressing.

Note: For coddled egg (an egg slightly cooked, yet still retaining a runny consistency), use a sharp point to place a small hole in the raw eggshell; microwave egg for about 20 seconds. Be careful not to cook longer or egg could explode.
