Maple Candied Bacon
MAKES 4 TO 6 SERVINGS
1 pound good-quality thick-sliced bacon
1/2 cup pure Grade B maple syrup
1 teaspoon Dijon mustard
Finely ground black pepper
Preheat oven to 400 degrees. Line a rimmed baking sheet with heavy foil. Place a baking rack over lined sheet pan and arrange bacon slices across rack next to each other, not overlapping.
In small bowl, whisk maple syrup and mustard. Generously spoon over top of bacon, and bake 12 to 15 minutes. Turn bacon over and baste with syrup mixture. Bake an additional 5 to 10 minutes, or until bacon has reached desired crispiness.
Carefully remove sheet pan from oven. Sprinkle hot bacon with scant pinch of finely ground black pepper. Let rest on rack for 5 minutes before serving.
