Easy dishes that'll make holiday memorable

Memorial Day weekend often is the start of warm-weather entertaining.

Perfect for Memorial Day weekend are Stout Steak Rolls with Spicy Ale Dipping Sauce from the National Beer Wholesalers Association for M.J.S. of Evanston; a salad with Boiled Dressing from Sue Schreiner of Downers Grove for M.C. of Orland Park, and Impossible Coconut Pie from Chicago area readers Angel LaCassa, Gerry Farganus, Dolores Gentile, Lila Damaska, Marilyn Pooler, Alyce Hoselton, Audrey Przybylski, Dolores E. Zaccaginini, Chris Busch, Mary Smielewski, Arlene Bloden, Emily S. Wic, Annamarie Dicicco and Carole Dankers for B.C. of Tinley Park.

All three recipes are easy and can be made ahead with the added good news that the Impossible Coconut Pie doesn't require making a crust -- it magically creates its own crust while baking. Though LaCassa's recipe calls for flaked coconut, which is cut into small pieces and is drier than shredded coconut, you can substitute the shredded variety. Shredded will result in a moister, chewier finished product.

To make Boiled Dressing (also shared by Darlene E. Stahl of Park Ridge): Sift 1 teaspoon dry mustard, 2 teaspoons sugar, 1/2 teaspoon salt, 2 tablespoons flour and 1/8 tablespoon white pepper into top of double boiler. Stirring slowly and constantly with a whisk, add 1/2 cup cold water in a steady stream until smoothly combined. Add 2 beaten egg yolks and 3 tablespoons apple cider vinegar; place over boiling water in bottom of double boiler. Stir constantly and watch carefully (it will thicken in the blink of an eye). Take mixture off heat; beat in 3 tablespoons butter. Then slowly beat in 3 tablespoons heavy cream. Refrigerate.
