Sour Cream Blueberry Pie and Blueberry Upside-Down Cake are delicious creations for M.R. of Fox Lake, who requested easy blueberry pie and cake recipes for a Fourth of July family gathering (she's responsible for providing the blue of a red-white-and-blue color scheme).
For B.W. of Evanston, who wants to make fruit smoothies at home, we have these solutions -- Blueberry and Pineapple, Blueberry Heaven, Healthy Blueberry and Blueberry-Banana Delight smoothies. Feel free to experiment with these smoothies.
Blueberry and Pineapple Smoothie: In a blender, combine 2 cups chilled fresh or slightly thawed frozen blueberries, 1 cup chilled pineapple or orange juice, 1 (8-ounce) carton of low-fat vanilla yogurt and 1 tablespoon sugar (or sweetener). Cover and blend for between 1 to 2 minutes until nearly smooth. Makes 2 servings.
Blueberry Heaven Smoothie: In blender, combine 2½ cups fresh blueberries or 1 (12-ounce) package thawed frozen blueberries, 1Ό cups apple juice, 1 cup vanilla ice cream, Ό cup milk and Ύ teaspoon ground cinnamon. Makes 4 servings.
Healthy Blueberry Smoothie: In blender, combine 1 cup blueberries (fresh or frozen), 1 cup plain nonfat yogurt, 2 packets Equal or Splenda sugar substitute, ½ cup water and 8 to 12 fluid ounces of ice cubes. Blend until smooth. Makes 1 large or 2 small servings.
Blueberry-Banana Delight Smoothie: In blender, combine ½ cup blueberries, 1 banana, 2 tablespoons vanilla yogurt, ½ cup skimmed or whole milk and 1 scoop vanilla ice cream. Blend for 30 seconds or until smooth. Makes 2 servings.
Please request an original recipe for Snickerdoodles -- the recipe my grandmother used made very tasty cookies that I have been unable to duplicate.
