There is an “r” in this month so it is once again peak oyster-eating season. (September through April, get it?) Slip into the season with one of the all-time classic accompaniments: a chilled, crisp glass of Sancerre from the Loire Valley of France. The 2011 Chateau de Sancerre ($15/glass) is 100 percent Sauvignon Blanc, offering nice minerality, hints of citrus and even a tiny bit of green apple — perfect with a plate of iced-down oysters at Shaw’s Crab House, 21 E.
