Father's Day can be made special with Pulled Pork Sandwiches with Mango Barbecue Sauce, requested by J.G. of Montgomery; Pepper-Cheese Muffins from Jeannine Konopacki of Chicago for S.N. of Chicago, or Coffee Pot Roast from Marlene Olson of Hawthorn Woods for W.S. of Chicago.

To make the fragrant and delicious Coffee Pot Roast, which serves 6: Heat oven to 300 degrees. Heat 1 tablespoon vegetable oil in a large, heavy skillet over high heat. Sear a 3-pound roast (Swiss steak, top round, bottom round or chuck) on both sides.

Meanwhile, combine Ό cup soy sauce, 1 cup coffee (as prepared for drinking), 2 bay leaves (crumbled), 1 clove garlic (minced), ½ teaspoon dried leaf oregano and 1 onion (sliced) in a large roasting pan. Transfer browned meat to roasting pan. Top with a second onion (sliced).

Cover and bake 3 hours, basting every hour with pan juices. If the liquid begins to boil away, add additional coffee and soy sauce.
