RICE PUDDING

MAKES 4 SERVINGS

½ cup basmati rice

8 cups whole milk

½ cup sugar

1 tablespoon raisins

¼ cup mixture of chopped nuts (almonds, cashews, pistachios)

2 teaspoons rose water

Pinch of saffron

Wash rice. In large saucepan, mix rice and milk together; heat until mixture begins boiling. Reduce heat and let mixture simmer until rice is cooked and mixture is thick (about 20 minutes).

Pour mixture into new pot; while continuing to cook the mixture on reduced heat, stir occasionally to prevent the rice from sticking to the bottom and sides of pan. When mixture becomes kind of thick and creamy, add sugar, raisins, chopped nuts, rose water and saffron. Cook additional 5 minutes, stirring occasionally to prevent sticking. Chill before serving.
