1 cup of dry,
old-fashioned oatmeal

1 cup plain, nonfat yogurt

2 cups skim milk

4 tablespoons frozen orange juice concentrate (save the rest in freezer for another use)

1 orange, cut into bite-size pieces plus 1½ cup of any combination of other cut-up fresh fruit such as bananas, strawberries, blueberries or peaches

4 tablespoons flaxseed

3 dried figs, chopped

4 tablespoons toasted almonds, chopped

Place all ingredients in medium-size bowl except almonds.

Mix together slightly, until all ingredients are wet. Cover and store in refrigerator eight hours or overnight. When ready to serve, remove from refrigerator and stir well. Spoon oatmeal into individual serving bowls. Sprinkle nuts on top of each serving.
