APPLE CHIPS WITH BLEU CHEESE DIP

MAKES 4 SERVINGS

Chips:

1 cup sugar

1 cup water

2 Granny Smith apples, cored and sliced in

1/8 -inch rings

Dip:

¼ cup crumbled bleu cheese

¼ cup cream cheese, softened

¼ cup heavy cream

¼ cup diced celery

¼ cup diced Red Delicious apples (or your favorite variety)

For chips: Preheat oven to 170 degrees. In saucepan, heat sugar and water over medium heat until sugar is dissolved and mixture boils.

Remove pan from heat and place apple rings in liquid for 20 seconds. Remove slices and arrange on lightly greased baking sheet. Bake for 2 hours or until chips are crispy. Cool.

For dip: In mixing bowl, combine bleu cheese, cream cheese and cream. Beat with electric mixer or by hand until smooth. Using spatula, stir in diced celery and apples. Serve with apple chips.

Note: Extra chips can be stored in airtight container.
