MAKES 8 SERVINGS
4½ cups peeled apples, sliced very thin (see note) 1 cup frozen tart cherries ½ cup brown sugar ½ cup white sugar ¼ cup flour 1 tablespoon butter, melted 1 teaspoon lime juice ½ teaspoon real almond extract Crumb topping: 1½ cups flour 1½ cups sugar ¼ teaspoon salt 12 tablespoons (1½ sticks) softened butter
In large bowl, mix brown and white sugars and flour. Combine flour mixture and melted butter with hands or pastry blender until crumbly. Add apples, cherries, lime juice and almond extract to flour mixture; combine. Pour fruit mixture into buttered 10-inch pie plate or 9x9-inch baking dish.
For crumb topping: In bowl, combine flour, sugar, salt and softened butter. Sprinkle crumb topping on fruit mixture, completely covering fruit. Bake for 30 to 45 minutes or until knife slides easily through center fruit and crumb-topped crisp is light brown and bubbly. Delicious with ice cream, cream or whipped cream.
Note: Suggested apple varieties are Cortland, Ida Red or Golden Delicious.
