MAKES 36 to 42 cookies

2 ½ cups all-purpose flour

½ teaspoon ground cinnamon

½ teaspoon ground cloves

½ teaspoon ground nutmeg

½ teaspoon salt

½ cup vegetable shortening

1 cup granulated sugar

1 large egg

2 teaspoon baking soda

1 tablespoon warm water

1 cup unsweetened applesauce

1 cup walnuts, chopped

½ cup raisins

Preheat oven to 350 degrees. Grease 2 baking sheets.

Combine flour, spices, and salt. In large bowl, cream vegetable shortening and sugar; beat in egg.

In separate small bowl, dissolve baking soda in warm water and then add to creamed mixture, beating until smooth. Beat in applesauce. Gradually blend in dry ingredients. Fold in chopped walnuts and raisins.

Drop dough by spoonfuls 1½ inches apart on baking sheets. Bake for 15 to 20 minutes or until lightly golden in color. Transfer to wire racks to cool.
