Rose has wine on mind, too

PARIS — Especially in France, nothing complements a great meal like the perfect vin — whether by the bottle or glass. And to complement Spring the restaurant, Chef Daniel Rose has opened Spring Boutique, a wine shop and by-the-glass wine bar, just a few steps down the street at 52 rue de l’Arbre Sec. You’ll see and hear visiting Americans, some Parisians who drop in after work — and a bit of both on the weekends, says Wine Director Josh Adler.

Spring Boutique ships nearly anywhere in the United States — and sells the same unique wines offered at the restaurant. And you won’t find the same standard vintages available at Chicago area shops, either — Spring specializes in finding and providing wines that are tough or downright impossible to find in the States. Connoisseurs who don’t mind spending the bucks can join the Spring Wine Club and receive three $500 shipments each year, for a total of 12 bottles.

But if you’re merely in search of a few great glasses, check out this light-drenched spot from noon to 8 p.m. Tuesdays through Saturdays for the “Spring Drink” — a drop-in wine tasting, no reservations required. For 10 euros, sample four different wines from the boutique’s collection — and the selection changes each week.

Take a seat at the window, grab a glass, and chat about the selections with Adler, a Pennsylvania native who’s lived in France’s famed Burgundy region. Better than a standard bar, you’ll actually learn something along with your libations. Follow Spring Boutique on Twitter @spring pariswine.
