Celebrate Silver Oak Cellars’ 40th anniversary with a special dinner at 6 p.m. July 10 at all three Gibson locations (Chicago, Oak Brook and Rosemont).
An array of main courses include citrus-cured Alaskan halibut with gooseberry vinaigrette, French breakfast radish and cucumber blossom paired with 2011 Twomey Sauvignon Blanc; seared King salmon with fresh chick peas, forest mushroom, golden beets, beet vinaigrette and tahoon cress with a 2009 Twomey Pinot Noir Anderson Valley; 6 points Berkshire pork tenderloin with coffee-cured pork belly, pickled cherry and Swiss chard with 2007 Twomey Merlot; Sonoma Valley rack of lamb with Szechuan peppercorn, 5 spice roasted plums, pomegranate ponzu and shiso partnered with 2008 Silver Oak Alexander Valley Cabernet Sauvignon, and Gibsons surf and turf paired with 2007 Silver Oak Napa Valley Cabernet Sauvignon.
