Hot days call for cool watermelon treats

The National Watermelon Promotion Board assists with three solutions for fun watermelon recipes for T.S. of Chicago, and Mona K. Stern’s flavor-inspired recipe for Baked Beans — first shared with Swap Shop in 2011 — makes an encore appearance for N.W.T. of Oak Park.
Watermelon recipes include a Watermelon, Pineapple and Peach Smoothie to start the day, a Watermelon Strawberry Shake sure to delight young and old, and Spiked Watermelon Balls, a refreshing and unique appetizer for adults. The smoothies and shakes are excellent ways to use up parts of the watermelon not used in making perfectly round watermelon balls.
To make 4 Watermelon Strawberry Shakes: In blender or food processor, process 8-ounce container non-fat lemon yogurt, 2 cups cubed and seeded watermelon, 1 pint fresh strawberries (cleaned and hulled), and 1 medium banana (peeled and sliced) until smooth and frothy. Serve immediately.
If you wish to add extra appeal for children, pour the prepared Watermelon Strawberry Shakes mixture into 4 small paper cups or ice pop sleeves. Freeze, inserting ice pop sticks or plastic spoons when mixture is partially frozen. These frozen pops need to be made ahead.
