You can use your grill for so much more than just meat and poultry.
As if to prove that point, Dave Grotto, local registered dietitian and author, created for Mazola a recipe for Zesty Grilled Watermelon, which serves 2. Here’s the adapted recipe:
Preheat and coat grill surface with oil. Mix a packet of Weber Chipotle Marinade with corn oil (according to directions on packet).
Cut a 2-inch wide piece of watermelon and slice it into 4 triangle pieces. Coat each side with marinade. Grill watermelon to its highest setting (or to 500 degrees) for about 5 minutes or until there is a nice slightly brown color with noticeable grill marks.
There’s a reason beyond flavor for the combo, according to Grotto, author of 101 Foods That Could Save Your Life and 101 Optimal Life Foods. The oil-based marinade helps the body absorb lycopene and other fat soluble nutrients better .
