Mango Slaw

MAKES 6 SERVINGS

2 cups green cabbage, shredded

2 cups red cabbage, shredded

1 cup mango, diced

1 cup cucumber, chopped

1/2 small red onion, sliced

2 tablespoons dried Fresno chile pepper

3 tablespoons lime juice

2 tablespoons olive oil

Salt and pepper

1/3 cup cilantro, chopped

Combine cabbages, mango, cucumber, onion and chile in a bowl. Toss with lime juice and olive oil. Season to taste with salt and pepper. Fold in chopped cilantro, then garnish with cilantro sprigs on top.

Our note: If can’t find dried Fresno, use a teaspoon of chile powder, or to taste.
