Time to start Dad’s Day planning

As Father’s Day menus are being planned, the American Egg Board assists with a recipe for a unique Bananas Foster Cheese Pie for B.H. of Hazel Crest; Patricia Kollpainter’s favorite German Potato Salad appears for D.M. of Bolingbrook, who lost the recipe after requesting one three years ago, and Nestle offers a delightful Sweetened Lime Topping for C.R. of Joliet, anxious to “dress up” fresh fruit.
To make the Sweetened Lime Topping — enough for 8 cups (8 servings) of sliced seasonal fruit or berries: Pour 1 cup evaporated milk into a small mixer bowl; place beaters into mixture. Freeze for about 30 minutes or until ice crystals form around edge of bowl. Meanwhile, place 1 cup fruit in each of 8 dessert dishes (glass dishes make for the prettiest presentation).
Beat evaporated milk on high speed for 1 minute or until very frothy. Gradually add ¼ to ½ cup granulated sugar (depending on desired sweetness) and ¼ to ½ cup lime juice; continue beating for 2 minutes or until mixture is stiff. Immediately top each serving of fruit with about ½ cup whipped topping. If desired, sprinkle with chopped nuts (preferably spiced nuts).
