Everything’s better with butter, even an Old Fashioned

Here’s a new twist on the Old Fashioned. You take your standard bourbon (Old Bardstown in this case), bitters, simple syrup and orange zest, but when you whip up a Brown Butter Old Fashioned at Coppervine, you also include butter. Actual butter. First, you brown it, then you clarify it. You infuse it in the bourbon overnight and you skim it off the next day. What results is a rich and mellow drink that matches surprisingly well with pappardelle pasta in an oxtail-tomato ragout with mascarpone cheese. It also elevates the dish it was created specifically to accompany: Maine lobster mac & cheese with a panko-Romano crust. This lip-smacking cocktail outsells every other drink three-to-one at Coppervine, and when you taste it, that math will make perfect sense to you.
