Tofu: The Cookie

MAKES 12 TO 14 (3-INCH) COOKIES
1 cup butter, softened
1 cup sugar
2 eggs, divided
9 ounces soft tofu, divided
1 teaspoon vanilla
1¾ cups unbleached flour
¼ cup whole wheat flour
¼ teaspoon salt
1/2 teaspoon baking soda
2 cups chocolate chips
Preheat oven to 350 degrees and grease two baking sheets.
Using an electric mixer, cream butter, sugar and 1 egg. Blend in 7 ounces of tofu and vanilla, followed by both flours, salt and baking soda. Fold in chocolate chips.
Drop dough by tablespoon onto cookie sheets, leaving space for cookies to spread. Press thumb into cookies to make an indentation. Place into each indentation a small cube of tofu, cut from remaining 2 ounces (if desired, coat each cube with a mixture of ginger powder and sugar).
Beat remaining egg and brush over each cookie. Bake for 35 to 45 minutes.
