Too hot to cook? A simple solution

OK, I give in. It is too hot to do much cooking. Plus, I want to enjoy summer. But, we’ve gotta eat.
The cooking is going to be kept at a minimum tonight. Burgers. Be they beef, turkey or veggie, I’m suggesting that be your choice tonight.
No fries, though. Instead, I’m going to give this salad from Everyday Food a try. Start the salad, and after about 10 minutes, put the burgers on. That should get everything done about the same time.
Right before I go to bed tonight, I am going to boil some eggs, and I suggest you do the same. Why? Even though the temperatures are inching down, it takes a while for it to cool off indoors. So tomorrow dinner is going to be egg salad on toast with a green salad. Fast, allowing time to enjoy summer once again.
