Summer salad comes together in no time

OK, I’m not crazy about “The Real Housewives” franchise, and was horrified when I ran into the episode with Teresa Giudice tossing over a table. (What the heck was that about?!)
But, I have to admit her cookbook, Fabulicious! Fast & Fit (Running Press, $18.95) has some good-looking recipes in it. Nothing’s too tough, either. In her acknowledgments she gives a shout-out to Rick Rodgers for his “culinary genius.” Might that be cookbook veteran Rick Rodgers of great recipes fame?
Anyway, the cookbook includes what sounds like a simple recipe that can morph into a good summer dinner salad.
