CAULIFLOWER AU GRATIN

1 head cauliflower 1½ cups diced celery 1 (4-ounce) jar sliced mushrooms, drained 4 tablespoons margarine 4 tablespoons flour 1½ cups milk 2 cups grated Cheddar cheese 12 soda crackers, crushed 2 tablespoons margarine, cut into cubes
In heavy saucepan, melt margarine; add flour and stir until smooth. Gradually add milk and cheese; cook, stirring, until smooth. Mix milk mixture with cauliflower mixture, and spoon into buttered baking dish. Top with crushed soda crackers, and dot with 2 tablespoons cubed margarine. Bake in 350-degree oven for 30 minutes.
