CAULIFLOWER AU GRATIN

MAKES 8 SERVINGS

1 head cauliflower

1½ cups diced celery

1 (4-ounce) jar sliced mushrooms, drained

4 tablespoons margarine

4 tablespoons flour

1½ cups milk

2 cups grated Cheddar cheese

12 soda crackers, crushed

2 tablespoons margarine, cut into cubes

Wash cauliflower, and break into florets. Cook in boiling water, until cooked but firm (about 12 minutes). Drain. Stir in celery and drained mushrooms.

In heavy saucepan, melt margarine; add flour and stir until smooth. Gradually add milk and cheese; cook, stirring, until smooth. Mix milk mixture with cauliflower mixture, and spoon into buttered baking dish. Top with crushed soda crackers, and dot with 2 tablespoons cubed margarine. Bake in 350-degree oven for 30 minutes.
