It's not mom's carrot cake, but it's close enough.
Duncan Hines' Moist Deluxe Decadent Carrot Cake is a mouthful of goodness.
The cake comes with a separate pouch of dehydrated raisins and carrots that, when soaked in hot water, rehydrates.
Combine, cake mix, three eggs, 1 1/4 cup of oil in bowl, add the rehydrated raisins and carrots, stir until smooth, then pour in cake pan and bake.
The entire preparation time takes about 10 minutes. The result is a rich and moist golden- brown cake with plump raisins, crisp, but chewable, carrot bits and good taste.
If there is a downside, it's that the finished product I caught a taste that resembled spice cake, but that was something only our former food editor and myself picked up on.
One co-worker commented, "It's as good as home-baked."
Another said, "It's the best thing I had, in like, forever."
The perfect companion for the carrot cake mix is Duncan Hines Creamy Home-Style Cream Cheese Premium Frosting, which is smooth and rich but more important not to sweet.
