Shedd’s Penguin Hops ale on tap at area bars

There’s something fishy about a new beer in town.
Starting Dec. 7, nine local taps will be pouring Penguin Hops, a limited release from Revolution Brewing created with hops grown in the Shedd Aquarium’s organic gardens.
The Shedd, which consistently tops the list of Chicago’s most attended museums and zoos, planted the hops five years ago to improve landscaping during construction. The hops were then used by the brewery in the kettle at the end of the boil so “you could get the flavor and aroma from their hops,” said Greg Underhill, Revolution Brewing’s general manager.
“We brewed a pale ale, something approachable for novice beer drinkers,” Underhill said.
One dollar from every beer sold will be donated to the aquarium.
Scott Sonnenberg, bar manager at Farmhouse Tavern, 228 W. Chicago, said customers should arrive early if they want Penguin Hops, which they are selling for $6. The bar received about 14 gallons of the beer. “Hopefully it won’t last through the weekend,” he said.
Though he hadn’t tried the beer, he was confident it would sell.
“I always have a couple of drafts from Revolution” at Farmhouse Tavern, Sonnenberg said. “They’re all high-quality beers.”
Representatives from Revolution and Shedd will be at the Whole Foods Market Lincoln Park, 1550 North Kingsbury St., from 6 to 8 p.m. Dec. 7, to talk about the beer and the Shedd’s gardens, which also provide food for aquarium animals.
